One Pot Rice Meal with Pork and Greens (Cai Fan)

Before having kids, I’m embarrassed to say that I barely cooked. During the weekdays, my husband and I usually grabbed food from our work cafeteria before heading home. And then on weekends, we would cook simply and eat out with friends. During the first few months after our firstborn arrived, our mothers were invaluable, in helping with cooking and caring for us while we cared for the little one. Here is one of the simple recipes bestowed upon us by my mother-in-law. One pot rice meal with pork and greens, how much easier can it get?

Tips for Making This One Pot Rice Meal

  • I use Chinese sausages in this recipe but you can definitely substitute with other types of salted/cured pork, like ham or bacon. Chinese sausages have a hint of sweetness to them. They are not the healthiest but a once-in-a-while treat and a break from “cooking” are must haves to keep me sane 🙂
  • I usually use any Chinese leafy greens in this dish. However, you can use spinach or other leafy greens that you enjoy.
  • This one pot rice meal can be made in a rice cooker or Instant Pot. You can also make it on the stove in a pot.
  • The prep time for this meal is just 5 minutes. However, the cook time will vary by rice type and cooking method.

Equipment

  • rice cooker or Instant Pot or even pot on the stove

Ingredients

  • 2 C rice brown or white, uncooked, rinsed
  • 2 C water or however much your rice cooker specifies
  • ½ C Chinese sausage diced
  • ½-1 lb leafy greens washed & chopped into bite size pieces
  • 1 tbsp canola oil or your favorite cooking oil

Instructions

  • Dice the sausages & wash and rinse the rice.
  • Add the rice, sausages, and water to the rice cooker / Instant Pot.
    For rice cooker, cook according to the rice cooker.
    For Instant Pot, cook on high pressure for 3 minutes for white rice, 15 minutes for brown rice, natural release for 10 minutes.
  • While the rice is cooking, cook the greens on the stovetop with 1 tbsp oil, until wilted.
  • When the rice cooker / Instant Pot is done cooking, take a spatula and gently mix in the greens with the rice and the sausages. Close the lid and let it sit for 5 minutes. Scoop out & enjoy!
