This 20 Minute Instant Pot Honey Mustard Chicken is the perfect dump and go meal for a busy weeknight. Complete the meal with vegetables by adding carrots to the Instant Pot! Unbelievably fast and easy. You’ll be finished with dinner from cooking to tummy in less than an hour!
20 Minute Instant Pot Honey Mustard Chicken

Equipment
- Pressure Cooker or Instant Pot
- Trivet
- Stainless steel bowl for the rice
Ingredients
- 4 bone-in, skin on chicken thighs works well with drumsticks too!
- garlic salt & pepper plain salt works as well!
- 2 tbsp honey
- 2 tbsp dijon mustard
- 1 tbsp soy sauce
- ½ C chicken broth or water
- 3 carrots chopped into 1-2 inch pieces, optional
Rice (optional)
- 2 C white rice rinsed
- 2 C water or chicken broth
Instructions
- Mix the honey, dijon mustard, soy sauce, and chicken broth (or water) together in a small bowl. Place the rinsed rice into a stainless steel bowl with the water.
- Set the Instant Pot to Saute. While the Instant Pot is heating up, quickly season the chicken thighs with garlic salt and pepper.
- When the Instant Pot is heated, add oil to the inner pot. Brown boths sides of the chicken thigh, skin side down first.
- Turn off the Instant Pot. Add the honey mustard mixture to the inner pot. Add the carrots, if using. Place the stainless steel bowl with the rice and water on a trivet in the inner pot. Cook on high pressure for 10 minutes and quick release when done (natural release works too). Reduce the sauce for 1-2 minutes, if you like thicker sauce.
