The first time I had quinoa was in Peru, while hiking Machu Picchu. I really liked the light, fluffy texture and the nutty taste of quinoa. A year ago, I bought a bag of 4.5 pound bag of quinoa from Costco, thinking it could replace the nutrition-less white rice that my family loves. I was wrong! They ate everything on their plate except for the Instant Pot Quinoa.
Quinoa is so much more nutritious than white rice! It has twice the protein and four times more fiber than white rice. So despite my family not loving quinoa, I try to sneak it into various foods, like this Quinoa Whole Wheat Bread. I’m also hoping that my kids will grow to love it. There are things that they tell me they don’t like but a couple of months later, they start enjoying it. So crossing my fingers!
Quinoa can also be cooked on the stovetop in about 15 minutes. The Instant Pot takes the same amount of time (including the pressurize time) so I like to make quinoa in the Instant Pot for hands free cooking!
Perfectly Fluffy Instant Pot Quinoa
Equipment
- Instant Pot or Pressure Cooker
Ingredients
- butter for greasing or nonstick cooking spray
- 1 C uncooked quinoa rinsed
- 1¼ C water or broth
- ½ tsp salt optional
Instructions
- Lightly grease the inner pot with butter.
- Put the quinoa and water in the Instant Pot. Add salt, if desired.
- Cook at high pressure 3 minutes. It will take about 10 minutes to come to pressure.
- Quick release & enjoy! This recipe makes 3 cups of cooked quinoa.
